The Forked Frittata
An Oshi breakfast favorite. Not quite an omelette, not quite a frittata — but maybe a forked version of it. Two eggs, raw milk, ghee, and whatever garnishes you fancy.

- Small skillet
Ingredients
- ✦2 eggs
- ✦Salt flakes (to taste)
- ✦Raw milk (a splash)
- ✦1 tbsp ghee or butter
- ✦Local honey (optional, for garnish)
- ✦FINCA YABISI salsa MACHA (optional, for a spicy kick)
- ✦PermaNerd Lemon balm (optional, for garnish)
Method

Get a small skillet and put it over medium heat, letting it warm up for a bit.

Add about 1 tablespoon of ghee or butter to the pan and let it melt.

Crack in 2 eggs and add salt flakes to taste.

Add a splash of raw milk to the eggs and whisk everything together to combine.

Evenly distribute the melted butter around the pan.

Pour in the egg mixture and let the bottom firm up for a bit.

Use a gentle swirling motion to distribute the cooked egg at the bottom, helping prevent the uncooked egg from sticking.

Continue to swirl, allowing the uncooked egg to flow to the bottom and cook thoroughly.

Once the eggs are cooked to your liking, use a little shimmy of the pan to loosen them and transfer to a plate.

Garnish with local honey, FINCA YABISI salsa MACHA, or PermaNerd Lemon balm.
